This past weekend we had a dinner party with some great friends and were even able to BBQ! If you don't live in Calgary, then you can't much appreciate the treat that it was to enjoy BBQ'd food at the end of April! I know that complaining about anything (especially the weather) won't get you anywhere, but it has absolutely SUCKED lately! It has been such a loooooooooooo(insert 1,000 more o's) winter and we are ALL ready for Spring to actually happen.
Every year I say that I am going to start doing some winter sport so that I can actually enjoy the winter months (since there are far more of them during the year than the nice months!) but I never seem to do it. Skiing is kind of out since I am afraid of heights - but that doesn't mean that I can't try something like snowshoeing. I am going to make that a 'must try' this winter. I think that people who embrace the snow and cooler weather here (because they enjoy winter sports) are all around much happier to be living here, so what the hell have I got to lose?
So at this dinner party, I decided to make some Hummus. It's one of those things that I have tried making at home and not really loved the result. In the past, my hummus always seemed to be too chunky and thick, and without much flavour. So this time I tried a few different things and it turned out wonderfully! I don't have any photos to share, but just try it -- you'll love it!
Stacy's Hummus
19oz can chick peas (minus 1/4 cup: My daughter happens to love eating them as is)
5 tbsp freshly squeezed lemon juice
1/4 cup tahini
1/2 cup plus 2 tbsp olive oil (don't be afraid of the oil!)
1/2 cup water
2 tbsp Epicure Guacamole Dip Mix
1 tbsp Epicure Sundried Tomato Dip Mix
1 tbsp Epicure Herb & Garlic Dip Mix
1 tsp Epicure Herbed Garlic Sea Salt
Throw it all in the food processor and mix until it's smooth and creamy. Enjoy with pita chips, cut up veggies, or fresh pita.
