Where has January gone?

 Today I decided to do a slow cooker meal. Seriously the easiest meal ever. I usually use a can of tomatillo salsa from Superstore, but I had this in the fridge so thought I would use it up. Added a bit of my spice pack "Buffalo Wings" from Epicure. Threw all that in the slow cooker and left for the morning. 
 Snack: same as yesterday...sunflower seeds, pepitas, few pecans and some cranberries
 I did not feel like a salad for lunch, so I shredded the chicken in the crockpot and had some of it for lunch with a scoop of guacamole. 
 Add some tortilla chips...
 Oh, this again. I didn't mind since it was quite good. But for dinner I roasted some sweet potatoes and put the chicken on top with some shredded spinach on the side. 
Tried the Chocolate Chip Cookie recipe from Against all Grain. Great recipe! So great I ate 3 of them. This is why I don't bake as often any more lol
