I am feeling the best I have felt so far on the Whole30 - I feel like I have my energy back.
Breakfast was pretty amazing: full fat coconut milk (maybe 1/4 cup), half a banana, cinnamon and chopped up pecans
Yum! This is a do-over
Lunch was roasted veggies and roasted sweet potatoes, the rest of the half can of tuna and some hot sauce!
Dinner was curried yam and coconut soup, with "BLT" wraps (sans wrap)
Snacks not shown here are nuts/seeds, small bowl of cherries and some olives. I think I have eaten more today than any other day...
On an interesting note, I found out about a product called "VeganEgg" from Follow Your Heart. It's basically an egg replacement for those who maybe would like 'scrambled eggs' or something, but cannot tolerate them. I'm a little weirded out by it but would definitely try it. I looked up the ingredient list and let's just say it was nothing I had seen before. Has anyone ever tried this?
