I am on a mission to find about 10 "go-to" dinner recipes. They need to be simple, healthy, delicious, fairly quick and easy to prepare (also free of dairy and gluten). Too often I find myself wondering what the heck to make for dinners. This way, I can simply look at my 10 selections and either rotate through them, or prepare one based upon what I have in my fridge and freezer.
I made this recipe a long time ago, forgot about it, and found it again very recently. It's a really good one that meets all the requirements above, so it's going to become #1 on my list of 10 (might be slightly more by the time I am done, but let's start with 10).

We just ate ours as a stew, but I am quite sure you could eat it over rice or something else if you needed it to be more substantial. I didn't use as much chicken, used double the amount of tomatoes and added extra salt and pepper.
