Shredded Chicken (Tomatillo Sauce)

Hi everyone! Another Go-To Dinner coming your way tonight. I posted this one before on my "big week" of the Whole30. I love this one because it's so easy. 

  Dump a bottle of the tomatillo sauce in your slow cooker. (I get this salsa from Superstore).
  Today I browned the chicken breasts before placing them into the Tomatillo sauce, but other times (in a rush) I haven't bothered. I think it's a bit better if you can do this extra step. Put your slow cooker on low for about 8 hours...
 Then shred the chicken with two forks. Comes apart so easily. Stir it all around in the remaining sauce..
Today we ate ours on top of some leftover rice, with some avocado and cilantro. Easy Peasy. 

Some other ideas...

Place the meat into a tortilla with some cooked bell peppers, avocado and cilantro...roll it up!
Add the meat into a tortilla and add cheese, peppers and cilantro and bake as a quesadilla. 
Keep the rice and chicken and add a mix of various other items such as beans, corn, salsa, veggies, spinach.......
